3.) Maine Uni: flying fish roe, cucumber, gold flake, ginger
4.) Smoked Maitake: black garlic + yuzu aioli, shiso, herbs
5.) Japanese Otoro: caviar, gold flake, cucumber
6.) Japanese A5 Wagyu: togarashi cured yolk, caviar, pickled vegetables
